
抜絲地瓜(バースーティーグァー)
能登の高農園さんのさつまいもを使用したデザート。
甘みを引き出すようにじっくりと揚げたさつまいもに、パリッと音がするほど薄く飴がけした一品。丁寧に作れば宮廷料理に、親しみやすい屋台のおやつにも。“料理を極限まで磨く”ということを体現する料理。
Bashu Tiguā (Fried Sweet Potato with Caramel)

This dish features sweet potatoes fried slowly to bring out their natural sweetness, then coated in a thin layer of caramel so crisp it crackles when bitten into. When prepared with care, it can be a royal court dish; when made more casually, it becomes a familiar street snack. It is a dish that embodies the concept of “refining cuisine to its absolute limit.”
